GOLMEDA RA TIMUR KO CHUTNEY
Hi Guy’s, Thanks you all for your tremendous love and support for my first blog and here i’m back again today with my another blog on Nepali cuisine. This time we are gonna explore about the chutneys prepared at Nepal which is again a quick and very simple recipe. It is known as Golmeda Ra Timur ko Chutney which means Tomato Spicy chutney. So looking at the name itself we come to know that it’s major ingredient would be the tomatoes, authentically it is made up of cherry tomatoes or the native tomatoes, but as per our availability we would use our regular tomatoes. Being a chutney preparation it is eventually i ed or prepared using the Silouto i.e Mortar and Pestle. It is served with plain rice and daal or also with any of the non-veg dish or as a dip sauce for momos, Vegetable fritters etc. It has a very sharp and tangy acidic taste that appetite the palate.The other herbs and flavouring added to it enhances its taste and aroma of the chutney.

INGREDIENTS
- Golmeda (Tomato) – 2 no
- Timur (Sichuan Pepper) – 1 tbsp
- Nun ( Salt) – 1tsp
- Besar (Turmeric powder) – 1/2 tsp
- Khursani ko Dhulo (Red chilly powder) – 1 tsp
- Jeera ra Dhaniya ko Dhulo (Cumin and Coriander) – 1 tsp
- Hariyo khursani (Green Chily) – 3 no
- Dhaniya (Corriander) – 1 cup leaves
- Lasun (Garlic cloves) – 4 no

METHOD
- Take two tomatoes wash it and roast it on a gas flame, peel it and remove the eye.
- Take a pan and roast the sichuan pepper until it gives out the aroma and keep it aside.
- Take the coriander and wash it properly and pluck out the leaves of it. Don’t peel the garlic, it is added with its skin just remove the eye of garlic.
- Take a blender and add the peeled tomatoes, Sichuan pepper, green chilies, coriander leaves, Salt, Garlic cloves and other dry masalas and blend it into a paste or chorse like chutney consistency.
- Serve it fresh and simple.
